I had a hankering for buckwheat soba noodles, so along came this recipe. I wanted some tofu, but I also wanted prawns, so why not combine both. If you are vegetarian, feel free to omit the prawns of course.
This recipe looks like there’s lots of steps, but if you do some prep in the morning like I do since I have a toddler running around and she’s not one to entertain herself yet for hours by herself, jeez, she’s so selfish. For this reason, I tend to do a lot of prep in the morning, so that when we get back from our afternoon outing after her nap, I can quickly whip up dinner while she by Cinema-Plus Pro” href=”#81309644″> plays or hangs off my leg.
I went to a Mexican wedding last November and this soup was served as a starter, I don’t know why it left such a lasting impression (considering the amount of memory lapsing cocktails I ingested). Its probably because its hearty, healthy and comforting, with a dash of nostalgia.
I sussed out a few recipes on the interwebs and mashed them together to make this easy crock pot version:
We’ve subscribed to Meatless Mondays! I was eating meatless on many nights of the week when I was single, but it when you live with a man, the need for meat at every meal seems almost mandatory. If I ever made anything vegetarian, I never seemed to fill him up enough and by 8pm he’d be ravaging our cupboards for a snack.
But not only is this butternut squash soup EASY, its made in the crock pot (did I say easy?), but its very hearty (or “meaty” as my boyfriend described it). I also made chunky homemade croutons to round it all off.
My husband loves to bbq, enough said! If there’s a way he can make a meal onto the grill, then he’s happy. Summer pretty much means at least one meal a week is bbq’d. Pretty soon this will be at least one crockpot meal a week.
Sundays in the winter often call for roast dinners and cozy meals – but this summer has been busy and lazy, and most Sundays we feed ourselves by indulging in takeout. Greek is always a healthy option, so it’s usually that or sushi that makes the Sunday delivery order.
