I’m not one to get mushy and make cards, but now that we have a daughter, I find myself making cards and doing a lot more handmade projects for presents. Valentine’s Day was no exception. Daddy got a homemade heart card using lots of tape as our little one loves tape. Apparently, tape can fix anything that’s broken.
After a nap and the rain settling down a bit in the afternoon, I whipped up this really great pasta dish for dinner. It was really fast too. I marinated the chicken breasts the night before, so all I had to do was boil the pasta and make the sauce. I also steamed some asparagus cause I’m crazy like that.
The original recipe calls for cream and half and half, but since I made cinnamon buns for breakfast, I thought we’d cool it slightly with the calories, so I made the sauce with about 1/3 cup of half and half and 0% plain greek yogourt. My husband said that this meal was a keeper and to keep it in the rotation. My daughter ate a lot of the chicken too. I had a hankering for buckwheat soba noodles, so along came this recipe. I wanted some tofu, but I also wanted prawns, so why not combine both. If you are vegetarian, feel free to omit the prawns of course.
This recipe looks like there’s lots of steps, but if you do some prep in the morning like I do since I have a toddler running around and she’s not one to entertain herself yet for hours by herself, jeez, she’s so selfish. It’s been quite a long time since we were in Cuba, but from what I remember there wasn’t that much seasoning on the food. There were lots of beans and pork and plantains, and oh ya, mojitos. How I miss thee! So when I stumbled upon this recipe on Pinterest, I thought it looked really tasty and flavourful, so obviously, I made it.
I prepped the chicken the night before to marinate and chopped up and put into bowls most of the other things the morning of, so that I could get it all ready for dinner once my daughter and I got back from the park.
Last weekend while I was perusing the farm market, I grabbed 6 ears of fresh corn on the cob from the local farm behind the market. 3 for $1 so why not. In a few weeks, it’ll soon be 10 for $1, and then I go corny for corn.
I had this recipe on my pinterest board, so decided I’d try it. I made a few alterations, which I’ve marked below.
I was in LA a few months ago, and got on a huge mexican food thing. One might say you can
actually eat too much mexican food, but my husband and I can prove you wrong.
To top the tacos off, they suggested homemade pickles which were delicious. I’ve never made
homemade pickles before, but they were super easy. I don’t think they are authentic or anything,
but now I’m thinking I could pickle just about anything.
For you cilantro haters, you could top with parsley, but I think that’s sacrilege.
Cilantro is great, so eat it NOW!
Every Saturday ( as long as the weather is nice) I go garage saling with my mom in the ‘burbs’ of Tsawwassen. The etiquette of garage saling is that you never ever pay full price, or at least you try not to. It’s stuff you are trying to get rid of. It amazes that some people won’t sell off something that they’ve obviously decided that they no longer needed for a measly 25¢ off what they initially wanted.
This is newest pride and joy for taking leftovers to work. It is originally for Indian food and has three different sections all held together with a metal latch.
It’s easy to clean and travels great.
Best of all, there was a $3 price tag on it and I paid $1. Bargain!
