I had a craving for greek/mediterrean food, so along came chicken gyros last weekend. Easy to make and again, allows my husband to use the bbq, but could also be done in a pan on the stove.
Tzaziki Sauce
1 cup plain yogourt1/2 english cucumber grated
1/2 tsp ground garlic
1 tsp white wine vinegar
salt & pepper
half a lemon squeezed
1 tsp dried dill
drizzle of olive oil
Chicken Marinate
2 tsp minced garlic
juice of one lemon
2 tsp red wine vinegar
2 Tbsp olive oil
2 large Tbsp plain yogourt
1 Tbsp dried oregano
salt & pepper
1-2 pounds of chicken breasts
Mix all ingredients for tzaziki together and put in fridge to blend.
I cut my chicken breasts in strips and poured the marinate on them and put them in a zip lock bag in the fridge for about 6 hours. Once ready, turn grill on to high and lay chicken on grill until cooked through. Serve on pita breads with lettuce, sliced red onion, tomato slices, pickles and lots of tzaziki sauce drizzled over. Enjoy!
