So if you know me, you know that I have a huge sweet tooth. Every Sunday, I try to make a baked good for my husband, but also for my fellow co-workers who also benefit on Monday morning.
I hadn’t made cookies in a while, so decided to whip some up.
Delicious with a glass of milk, soy, almond milk, kahlua?, or whatever you want to drink with it.
Oatmeal Chocolate Chip Cookies
- 1-3/4 cups of whole spelt flour
- 1/2 tsp salt
- 2 cups rolled oats
- 3/4 cup unsalted butter
- 3/4 cup packed brown sugar
- 1 tsp baking soda
- 1/4 cup boiling water
- 1 tsp real vanilla
- 1 cup of chocolate chips (or more)
Preheat oven to 350’F. Line two baking sheets with parchment paper.
Sift together flour and salt. Mix in oats. Cream butter and sugar. Dissolve baking soda in water. Gradually stir into creamed mixture. Add vanilla. Add flour mixture in 4 parts, mixing well after each addition. Stir in chocolate chips. Drop spoonfuls of dough onto a cookie sheet and flatten. Bake for 12-15 minutes.
